Venue interview with an events professional: Emma Levick from Holiday Inn Brighton Seafront

This week, we interviewed the lovely Emma Levick from Holiday Inn, Brighton Seafront where we found out more about her role as Sales Office Manager and some of the many exciting events that this venue has played host to.

Having worked with The Holiday Inn Brighton Seafront for many years to promote their Christmas Parties, we were only too keen to find out more about their events and what sets their venue apart from the rest!

  1. Hi! Tell us a little bit about yourself and your role at your venue

Hello! My name is Emma and I am the Sales Office Manager at the Holiday Inn Brighton Seafront. I look after all meeting space at the hotel, handling a wide range of bookings from large corporate conferences to weddings, birthday parties and private gala dinners.


  1. What do you love about your role?

I love how varied every day is. We have 9 separate function rooms at the hotel with our largest hosting up to 450 delegates and so every booking is different. In a typical week, we could host a hen party life drawing class, a wedding, a pharmaceutical conference and a trade-show style exhibition! I get to meet and work with so many different types of people each day, it is very rewarding.

  1. What would you say that the most challenging aspect of your role is?

Tailor-making an event to suit a client’s very specific requirements can be challenging at times. As we are such a versatile venue, there are a lot of different options, but over-coming this just makes my role even more satisfying.


  1. What’s the most exciting event your venue has ever hosted?

We hosted a ‘Strictly Come Brighton’ FAM trip event for 150 corporates based all around the UK to showcase our venue to a new audience. We prepared a five course Brighton themed gala dinner, followed by a professional ballroom and Latin inspired dance class for all FAM Trip guests, complete with a celebrity judging panel. We also organised a treasure hunt around Brighton, a trip on the i360 and an after dinner Strictly themed disco – there were plenty of photo opportunities with multiple themed props!

  1. Why do you think that it’s important for employers to plan events such as Christmas and summer parties for their employees?

It is a fantastic way to celebrate all that has been achieved throughout the year. I do also feel it is important to encourage teams to socialise and enjoy themselves – it really does help to build a strong, motivated team. It also creates a talking point for the rest of the year, building excitement towards the next company event. After all, who doesn’t love letting their hair down every once in a while!

  1. What sets your venue apart from the rest?

We have recently completed a £4 million internal refurbishment, however original chandeliers from the 70’s still remain giving our function rooms a classic, formal feel, whilst still being modern with a Brighton theme throughout.

We pride ourselves on our very strong team, who are always eager to exceed each guest’s expectations. We all have a strong knowledge of the hotel as well as our local surroundings which enables us to create memorable moments.

7. Christmas party season is over at present, but when do you start planning your Christmas parties and brochures for 2018?

Planning Christmas 2018 has already started for us. We have already begun discussing what our potential 2018 Christmas offerings could be in order to ensure a memorable night is had by all. Promotion will probably start around April time, once we receive our brochures, so watch this space…


  1. What kind of bespoke elements could you incorporate in and personalise a client’s exclusive party?

We are very lucky to have such flexible function spaces and a trusted list of local suppliers which means we can usually make most visions come true. From venue theming, to tailor-made menus and drink packages we pride ourselves on bringing ideas to life.

  1. Do you offer corporate summer parties? If so, what kind of themes do you offer?

We certainly do! We usually tailor-make unique offerings for exclusive parties, however we will be looking into an all-inclusive offering this year as our all-inclusive Christmas parties have been so popular!

  1. Finally, what’s your favourite cocktail to enjoy at a party?

To be honest, I love a good prosecco cocktail – Kir Royale is probably my favourite, however I couldn’t stay away from the Baileys cocktails over Christmas!

How to make a delicious vegan nut roast for Christmas in three simple steps!

The traditional Christmas turkey is always a classic choice for dinner, but if you’re a vegan, then you certainly won’t agree! There’s so many mouth-watering options out there for vegans for a festive main, but personally, we think that you can’t go wrong with a tasty nut roast with all the trimmings!

Follow these simple steps with our fail-safe vegan recipe, serve with a mushroom gravy and get ready to indulge in a slice of nut-roast heaven! This yummy recipe proves that you don’t have to compromise on taste at Christmas time if you’re a vegan, plus it’s super easy to make too!



  • 150g red split lentils
  • 1 red onion, finely sliced
  • 50g sun-dried tomatoes, drained and chopped
  • 1 clove of garlic, crushed
  • 100g mushrooms finely chopped (feel free to mix several varieties, chestnut musgrooms/shiitake mushrooms etc)
  • 60g Cashews, finely chopped
  • 60g Peanuts, finely chopped
  • 50g mixed seeds
  • 1½ tsp dried mixed herbs
  • 2-3 tsp Maple Syrup
  • 1 carrot, grated
  • 2 sticks of celery
  • Salt and pepper
  • Vegan friendly oil



Before you start creating this tasty dish, ensure that you preheat the oven to 190 degrees C/gas mark 5.

Step 1: Boil the red split lentils in water for around 15 to 20 minutes and drain once cooked.

Step 2: Whilst the lentils are cooking, fry the sun-dried tomatoes and onion in a large pan for six minutes, before adding all other ingredients (with the exception of the seasoning and the maple syrup for now). Give the ingredients a good stir before adding the seasoning, the cooked lentils and the maple syrup to bind the mixture together. Give it a final stir and you’re ready for the next stage

Step 3: Grab your loaf tin and make sure that it’s lined with some decent non-stick baking paper, before transferring your mixture into the tin. Add a selection of mixed seeds for the topping (we love pumpkin seeds!) for a crunchy topping and bake for around 45-50 minutes until solid. Once removed from the oven, leave to cook for a few minutes. Once it’s cooled down a little, remove from the loaf tin and cut yourself a nice, generous slab to serve with mushroom or vegetarian gravy and all the trimmings for a scrumptious festive lunch!

On cold nights when the decorations are up and the fire is burning, there’s a drink we Brits turn to, which warms us up and fill us with all kinds of Christmas joy. Yes, you guessed correctly; it’s mulled wine of course! Despite having an ancient history, this popular drink is almost exclusively drunk during the Christmas season nowadays. Some of our best corporate Christmas parties will involve mulled wine at some point. It’s that perfect combination of festive flavours, with a cheeky kick to get all the conversation and sing-alongs going.

If you don’t already know, mulled wine is a blend of red wine, sweeteners in the form of sugars and fruit and a variety of mixed spices that will flavour the drink. What goes into this spice mix has been up for debate and has changed over the many centuries that this drink has existed.

Wine originally came to our shores with the Romans. They were experts in all things vino, but entering colder climates such as Scotland, created an understandably need for a hot drink. Their impressive empire allowed them to bring spices in from all over the world, and thus a heated spiced wine drink was invented! Fast forward 1000 years and the mulled wine we recognise today was found in a medieval cookbook. The ‘Forme of Cury’ is a cookbook from 1390 which has a printed recipe for mulled wine inside. So if you think about it, you’re literally drinking history when you indulge in the mulled wine at Christmas!

The beverage has gone through many iterations over the years, and all the famous names in the world of cooking have had a go. Delia and Jamie Oliver are just two who have created their very own interpretations. But with all these variations around, what is the perfect recipe for the ultimate mulled wine after all this time? Well you’re in luck, as we’ve found it and made sure to write it down so you can make the perfect festive drinks every year. Who knows, in a thousand years, maybe someone will find this blog…



Enough for 12 servings

  • 2 unwaxed oranges
  • 1 lemon, peel only
  • 150g caster sugar
  • 5 cloves, plus extra for garnish
  • 5 cardamom pods, bruised
  • 1 cinnamon stick
  • A pinch of freshly grated nutmeg
  • 2 bottles of fruity, unoaked red wine
  • 150ml ginger wine

Step 1

The first step is to pre-heat a large saucepan. While this is on, peel and juice a whole orange and pour into the pan along with the peel of one lemon. The sugar and spice all go in afterwards. Cover the ingredients with red wine, but only so they are just covered. Mix this with a wooden spoon until all the sugar has dissolved. Then boil on high heat for 5 minutes, reducing the mixture until a thick like syrup.

Step 2

While the syrup is forming, prepare another orange by cutting it in to six equal segments. Stud the skin with cloves in a straight line. These will be used as a garnish for the final drink.

Step 3

The last step is all about melding the flavours together. You’ll want to infuse the wine with that amazing syrup you’ve just created! Turn the heat down, pour the remaining red wine in and leave it on a low simmer. Add the ginger wine and when it’s suitably hot , you’re ready to serve! Just make sure you leave it on a low heat when serving.
