Watermelon Pina Colada

3 oz. Pineapple juice

2 oz. Malibu White Rum

1 oz. Coconut Milk

2–3 Cubes Watermelon (should be around 1-inch each)

1 cup of crushed ice

Watermelon slice to garnish

This tasty concoction takes a refreshing twist on the classic and much loved tropical cocktail, the Pina Colada. It’s super easy to make and all you need is a blender! Simply throw all the ingredients into the blender and blend for about a minute. Once finished, pour into Pina Colada glasses and garnish the side with a slice of watermelon. For maximum effect, add in a cocktail umbrella for that authentic holiday feel!

Passion fruit Mojito Recipe

2 large, ripe passion fruit, halved

Large handful mint leaves, torn

2 tbsp light brown sugar

2 ½ oz. white rum

Soda water, to top up

Once again, we’ve taken a tasty twist on another favourite cocktail, the Mojito. This time around, we’ve added some passionfruit to it and made it come alive! It doesn’t take long to make and tastes fantastic. To begin, simply remove the pulp from the passion fruit and place into a jug along with the mint leaves, sugar and the white rum.

Then place your muddler to crush the ingredients and mix them well together. If you don’t have a muddler, then the end of a rolling pin will work perfectly too. Add in plenty of crushed ice to the jug, before pouring in soda water to fill up the jug. Serve in two hi-ball glasses and prepare your taste buds for a real taste sensation!

Summer Berry Mocktail (Non-Alcoholic)

Six Strawberries

10ml Elderflower Cordial

10ml Ginger Syrup

10ml Fresh Lemon Juice

60ml Cranberry Juice

60ml Apple Juice

Strawberry and lemon slice to garnish on the side

The Summer Berry Mocktail is a refreshing alternative to an alcoholic cocktail and makes for the ideal drink for the warmer weather. To make, add the strawberries into a cocktail shaker and muddle. Once the strawberries have been crushed well, add in the elderflower cordial, lemon, cranberry juice, ginger syrup and apple juices. Pop on the top and get shaking! Add ice to a tall glass and pour tall – just don’t forget to add your fruit to garnish. So there you have it – the perfect summer berry mocktail which be sure to be a hit with the whole crowd!
